I tried Thai Chicken Satay Skewers tonight. I was interested to try this because I experienced some sort of spicy chicken skewers entree as a child while vacationing in Indonesia or Malaysia. It always stuck with me so I was hoping to make something similar.
I give VERY high marks to the marinade. The only things I might change is to try it with larger chunks of onion next time. I wonder if 1/8th pieces of a medium yellow or white onion would hold up better than the green onion? Also, although I enjoy the taste of peanut satay, I don't think the dipping sauce was really necessary. I think a good alternative would be to reserve an additional amount of the marinade to add extra moistness and kick to the finished chicken. Serve over rice.
